      Oyster Kaki is quite delicate and needs to be fresh. Its common kind, Magaki, is found in the winter and spring. Could be served as part of a main meal or as an appetizer in deep fried form. Iwagaki is Rock Oyster and in season in the summer. Aside from different seasonal availabilities Iwagaki is the larger cousin.
