ปลาBluefin Tuna เป็นหนึ่งในพันธุ์ปลาซึ่งเป็นที่นิยมทานในประเทศญี่ปุ่นและมีมูลค่าทางเศรษฐกิจมากที่สุดในโลก อาศัยอยู่ในทะเลน้ำลึกระดับ ตั้งแต่ 50 เมตร ถึง 2,743 เมตร ตามมหาสมุทรต่างๆ ทั่วโลก มีลักษณะเด่นเป็นเอกลักษณ์ไม่ซ้ำใครตรงที่สีของเนื้อปลา Bluefin Tuna จะมีสีแดงเข้มที่ส่วนเนื้อตรงกลางลำตัว และสีชมพูที่ส่วนท้อง ซึ่งแตกต่างจากปลาYellowfin Tuna ที่สีของเนื้อปลานั้นจะอ่อนกว่าอย่างเห็นได้ชัด และรสชาติก็ต่างกันมาก
ซึ่งหากจะสังเกตกันง่ายๆ ตามร้านอาหารญี่ปุ่นที่ไปทานกันอยู่นั้นเค้าใช้ปลาอะไร อันดับแรกเลย ดูที่ชื่อเมนูก่อน หากเป็นร้านที่นำปลา Bluefin Tuna มาใช้จริงๆ จะใช้ชื่อเต็มว่า Hon Maguro หรือ เป็นชื่อของปลา Bluefin Tuna ไปเลย ส่วนใหญ่แล้วจะหาทานได้ตามร้านอาหารญี่ปุ่นในระดับสูง หากร้านไหนใช้ชื่อคำนำหน้าของเมนูว่า Maguro หรือ Tuna ก็แสดงว่าร้านนั้นใช้ ปลา Yellowfin Tuna นั้นเอง
ก่อนอื่นเราต้องทำความเข้าใจก่อนว่า ปลาทู่นาที่นิยมทานกันแบบดิบนั้น จะมี 2 สายพันธ์หลักๆ คือ Bluefin Tuna (ปลาทูน่าครีบน้ำเงิน) และYellowfin Tuna (ปลาทูน่าครีบเหลือง) ความแตกต่างระหว่าง 2 สายพันธุ์นี้ คือ
Bluefin Tuna นั้น นับว่าเป็นสายพันธุ์ปลาทูน่าที่ดีที่สุด มีมูลค่ามาก ส่วนใหญ่หาทานได้ตามร้านอาหารญี่ปุ่นระดับสูง รูปร่างลักษณะของปลาสังเกตได้จากขนาด พบได้ตั้งแต่ 80 กิโลกรัม ไปจนถึง 400 กิโลกรัม ลำตัวมีสีน้ำเงินเข้ม และช่วงท้องเป็นสีเงิน พร้อมกับมีเส้นเป็นเงาสะท้อนที่ใต้ท้องบริเวณหาง อาศัยอยู่ในทะเลเขตหนาวถึงหนาวจัด ทำให้เนื้อของBluefin Tuna โดดเด่นตรงที่มีไขมันแทรกเยอะ เป็นไขมันอิ่มตัว แต่ให้พลังงานต่ำ เนื้อนุ่ม แน่น มีรสชาติ กลมกล่อม ชุ่มฉ่ำและนุ่มลิ้นเหมือนกับเนย อุดมไปด้วยคุณค่าทางโภชนาการที่เป็นประโยชน์แก่ร่างกายไม่ว่าจะเป็น โปรตีนชนิดย่อยง่าย, วิตามินนานาชนิด, ไอโอดีน ,โอเมก้า 3 รวมทั้งไขมันชนิดดี ที่เรียกว่า HDL ที่ช่วยป้องกันการสะสมของคอเลสตอรอล แถมยังเป็นอาหารที่มีแคลอรีต่ำอีกด้วย โดยให้พลังงานเพียง 93kcal/100g (โปรตีน 84.6kcal ไขมัน 0.9kcal)
ส่วน Yellowfin Tuna นั้น จัดเป็นปลาทูน่าที่มีขนาดใหญ่ชนิดหนึ่ง แต่เล็กกว่า Bluefin Tuna มีรูปร่างลักษณะแตกต่างที่เห็นได้ชัด คือ ครีบหลังอันที่สองจะสูงและเรียวยาว มีสีเหลืองสด พบได้ในมหาสมุทรเขตร้อน เนื้อของ Yellowfin Tuna จะมีไขมันแทรกน้อย เป็นปลาที่มีส่วนเนื้อแดงเยอะซะส่วนใหญ่ เนื้อเป็นทรายไม่ละเอียด มีราคาถูก มักขายเป็นทูน่าแช่แข็งและขายสด สำหรับใช้ทำเสต็กและซาชิมิ 106kcal/100g (โปรตีน 97.2kcal ไขมัน 3.6kcal)
ความต้องการทานปลา Bluefin Tunaของคนญี่ปุ่นเพิ่มมากขึ้น เกิดขึ้นจากการได้รับอิทธิพลจากประเทศอเมริกา และการขยายตัวของเศรษฐกิจ ทำให้ร้านซูชิเติบโตอย่างรวดเร็ว
และในช่วงปี 1970 สถานการณ์เริ่มเปลี่ยนแปลงไป จากที่สามารถจับปลา Bluefin Tuna ได้ภายในประเทศ ก็กลายเป็นว่าต้องนำเข้ามาปีละหลายพันตัน และที่สุดก็กลายมาเป็นปลาที่ต้องนำเข้าปีละเป็นหมื่นตันภายในช่วงปี 1990
จากความต้องการของปลา Bluefin Tuna ที่เพิ่มมากขึ้น ทำให้ราคาสูงขึ้นเรื่อยๆ จนต้องมีการประมูลกันอย่างดุเดือด ที่ตลาดปลาTsukiji ซึ่งเป็นตลาดปลาที่ใหญ่ที่สุดในโลก โดยมีการประมูลที่แพงที่สุดในปี 2013 ด้วยขนาด 222 กิโลกรัม ราคาสุทธิ 155.4 ล้านเยน หรือเทียบเท่า 46 ล้านบาท
หลังจากที่ตลาด Tsukiji ถูกปิดลงในวันที่ 5 ตุลาคม 2018 และถูกย้ายไปที่ตลาดปลาแห่งใหม่ ที่ชื่อว่า Toyosu ในวันที่ 11 ตุลาคม 2018 ราคาปลาทูน่าก็ได้ถูกทำลายสถิติอีกครั้งในวันที่ 5 มกราคม 2019 ด้วยราคา 333.6 ล้านเยน เทียบเท่า 100 ล้านบาท ซึ่งมีขนาด 278 กิโลกรัม โดยเป็นการประมูลที่สูงสุดประวัติศาสตร์ของประเทศญี่ปุ่น
